The start of my low carb journey

I love my kids. The joy my children give me is unexplainable. When I was in my teens and early 20s I was told that it was “very unlikely” I would be able to have kids due to having severe Polycystic Ovarian Syndrome. I decided at that point in my life that having children wasn’t high on my priority list and I would rather travel and focus on my career. To some women news of possibly not being able to conceive would have been heart breaking but it wasn’t upsetting to me. I have never been the type of gal who wanted to be married or have kids. It is so funny how life works. I now have my 16 year old son and 2 & 3 year old daughters. I am also divorced and remarried! Never say never.

It is very important for others to know, as I received more information/knowledge in life, situations changedț. When I found out I was pregnant with my son, I was COMPLETELY shocked. I was in a very unhealthy marriage and knew we were not going to make it. I was planning my exit strategy and stressed non stop. I was relentless with taking my birth control pills. Even though I knew I had PCOS and several doctors told me it was nearly impossibleto get pregnant, I also knew I wasn’t taking any chances. I made an appointment to see my obgyn because I wouldn’t stop spotting. When I found out I was almost 6 months pregnant, I could have fainted. I was so large at 305lbs that I couldn’t tell I was pregnant. I never had periods due to my PCOS. I had high blood pressure, cholesterol and was pre-diabetic. I was 25 years old.

The doctor who saw me changed my life. Per her information, if I drastically reduced my carbohydrate intake, I could possibly reverse metabolic illnesses and have a healthy baby boy. Enough said. I changed my lifestyle that day. When I had my son, I did not have high blood pressure,cholesterol and I was not even CLOSE to being diabetic. I continued my low carb lifestyle from there. Living low carb allowed me to lose over 125 lbs, I no longer had/have PCOS, I had 2 children near 40 and I feel so much BETTER.

I know the power of good, nutrient-dense food and I want to share the possibility of food being medicine to the world. Lower carbohydrate intake doesn’t have to mean Ksto, it can simply mean reducing as much SUGAR from your diet as possible and eating whole grain foods with lower glycolic index fruits such as blackberries and Strawberries. I currently keep carbohydrate intake under 125grams per day on heavy lifting/exercise days and 75 grams on lower intensity days. Eating lower carb doesn’t mean I eat bacon all day. There are several days I only eat veggies and n most days I eat meat, it consist of lean cuts of meats like Skinless chicken breast and seafood. Think of the Mediterranean Diet with very small amounts of grains, if any.

Do what works for you. Consult your doctor and know There isn’t one style of eating that works for everyone. This is what works for me .
